Damo is owned and operated by Asefa Dukamo, which is located in Damo Village of the Bensa District in Sidama, Ethiopia. Coffees from Damo are simply amazing, and this is a stunning lot that has been specially prepped in the honey process technique with late harvest fruit. With only ripe cherries selected at harvest, they are then picked and separated by density. The cherries are pulped and then moved to a tank to begin fermentation. Once the mass becomes sticky, it is transferred to drying beds to lock in all of the magical flavor. While we have offered washed and natural offerings from Damo, this is the first honey process. The cup is rich and sweet with notes of honeydew melon, kiwi and fresh thyme.
