Luis "Wicho" Valdes owns and operated Santa Isabel, and estate located in the San Cristobal area of Coban, Guatemala. Coming from three generations of cafeteros, Luis has enough experience in his blood, yet his higher education in agricultural management helps solidify the expertise necessary to pull off such exceptional coffee in such a location. There is a high relative humidity here, so drying high altitude coffees is a challenge. This coffee is spectacular in its presence, with a rich sweetness and pronounced acidity that is woven into a silky tactile experience. The cup holds dynamic notes of watermelon, tamarind and demerara sugar.
