Cirilo Chambi has been cultivating coffee on Finca Quispisenca for 20 years, which he owns and manages. The finca is closest to the Cruzpata community, which is in the Sandia Valley of Puno, Peru. Cirilo utilizes natural farming practices to regenerate soil to optimum health, and it shows in the spectacular sweetness and richness of flavors. Situated at 1800 meters, there are Typica, Caturra and Bourbon varieties cultivated here. Fruit is harvested when ripe, sorted and pulped. The coffees are wet fermented for 18 hours, then dried on raised beds for 12-15 days.
