Located in the Illimani community of the Caranavi Region, Finca Rosita is a family owned and operated venture that produces specialty coffee over many hectares. While Bolivia has a shorter history than other origins with coffee, there is great promise for the future as information proliferates and younger generations have taken hold of family lands and cultivation practices. This particular lot is comprised of Catuai variety grown at 1800 meters. The cherries are measured for BRIX sugar content to ensure perfectly ripe fruits before harvest, and for processing the cherry undergoes anaerobic fermentation in sealed containers. The prolonged and even fermentation produces intense flavor in the final cup, making this a totally unique experience.
