Analynn Garro is no stranger to coffee production, having spent the better part of 30 years in the trade. In 2016 she built Mata Acuna, a processing facility, on her property. This allowed full control over the coffee she produced, with the ability to maintain stewardship of the land. This lot contains Caturra, Catuai, Obata and H3 Hybrid varieties. The ripe cherries are selected and puped, fermented and washed. The coffee is then dried in solar covers to ensure full and even drying. The cup profile is dynamic, with sweetness at every turn. We find delightful flavors of lychee, plum and walnut.
