This stunning coffee comes from The San Jose area of Costa Rica, and offers a glimpse into sustainably produced coffees of high caliber in the natural process category. Packed with fruity, jammy sweetness, this lot is the result of perfect setup and execution on processing. Four small lot farmers combined their produce to achieve this lot, where cherries are collected, floated to remove underripes, and then slow-dried in the sun on raised beds to achieve flavor preservation. Milling and sorting after drying ensures well sorted and consistent results for the mass. We taste strawberry, plum and a refined pistachio note in the cup.
