Yirgacheffe has a long tradition of producing exquisite coffees that present elegant and refined flavors sought the world over for. The people here in the Idido community are a part of the Aricha municipality which is remote and mountainous. There are indigenous heirloom cultivars here, located between 1900-2200 meters. The coffee benefits from the intercropping of shade trees to promote slow growth and to naturally fertilize the fields. Cherry is collected and are taken to a collection site for depulping and processing. Typically, the seeds are fermented for 48-72 hours and dried on raised beds for 4-5 days. The result is a sparkling clean flavor profile filled with bursting florals, raw sugar and ripe cherry.
