Las Pirias is a district in the San Ignacio Province of the Cajamarca region of Peru. Here, the Santuario Cooperative oversees the production of coffees by the local farmers, providing incalculable assistance with all agricultural techniques, processes and innovations. There efforts are supported by core beliefs in transparency, quality, and sustainability for the producer and environment. The mix of varieties grown here include Yellow Caturra, Typica and Pache which grow between 1,700 and 1,800 meters. When seeking comfort, this lot abounds with fresh and crisp red apple acidity, supported by rich and low-toned sugars. I find this coffee dynamic for all brew methods, holding up wonderfully as filter or espresso.
