Bochessa kebele is a community deep within the Sidamo region of Ethiopia. The washing station of the same name, Bochessa, has been in operation since 2022. The production volume is impressive here, however the attention to detail and precision handling of such a volume is most impressive. Cataloging all pertinent information about collection, pre and post processing details and lot separation make for dynamic flavor outcomes. This lot is comprised of heirloom varieties which are collected, washed and mechanically de pulped, soaked overnight and fermented before sun drying on raised beds. The cup is brimming with decadent flavors like grape, strawberry and wildflower honey.
