Roy Hernandez is the owner and producer at Finca Guayabina in Mercedes, Honduras. We are so happy to have this coffee return in a new form, as an anaerobic natural. Over the years we have served washed and honey processes of this coffee, so this year offers a chance to experience Guayabina in a new modulation. This lot is comprised of the Pacas varietal grown between 1,200 and 1,250 meters. There are several types of shade trees at the finca, helping to create a rich ecosystem and healthy plant growth. Roy's commitment to quality is evident through the year over year improvements. Each crop culminates new insights and a disciplined path to refined craft.
