La Palta is located in the municipality of Querocoto of the Cajamarca region in Peru. Owned and operated by Luben Perez Verastegui, La Palta is a newer venture for Luben, a lifelong cattle rancher from the area who has now dedicated his work to coffee. Along with his wife and five children, they manage the production of the coffee amongst growing foods like cassava, plantain, corn and avocado. The coffee varieties grown include Caturra and Catuai. Ripe fruits are collected and fermented for 48-50 hours and then are dried in raised parabolic covers. Altitudes are averaging 2300 meters, helping to slow the growth of the fruits, building complex acids along the way. We taste delicious and comforting notes of golden raisin, pecan and milk chocolate. pomegranate. A classic profile with a mineral like finish leaving you asking for more.
